The ingredients needed to make Coconut Pudding:
  1. Get 1 cup coconut milk
  2. Take 200 gms Marie biscuit
  3. Take 100 gms butter
  4. Prepare 2 tsp cornstarch
  5. Make ready 2 tsp gelatin for coconut pudding
  6. Get 2 tsp gelatin for pomegranate juice
  7. Take 1/4 cup milk
  8. Take 2 Tbsp sugar
Steps to make Coconut Pudding:
  1. In a blender blend the biscuits and add to a bowl. Add melted butter to it to form the base. Mix well. Grease the cake tin and place the base on it. Press with back of spatula and refrigerate for 20 mins
  2. In a bowl add coconut milk and add gelatin. Stir to dissolve and bring it to boil, simmer for 3-4 mins. In another bowl add milk, cornstarch, sugar and mix well. Add this milk mix to coconut milk and simmer for 3-4 mins. Set aside to cool
  3. Add the cooled coconut mix to the biscuit base and let it set.
  4. Make pomegranate juice and add gelatin. Mix well and let it set.
  5. Add pomegranate juice to coconut base and refrigerate for 45-60mins
  6. Enjoy Coconut Pudding
