Steps to make Mango china grass pudding:
  1. Break the china grass into pieces and soak in water and set aside for 10mins.
  2. Boil 250ml milk.. Boil on low to medium flame for about 4-5mins till lightly thickens, and then add sugar. Stirr till the sugar dissolves and turn off the flame.
  3. Now cook the soaked china grass stirring continuously till it starts boiling. Keep stirring till it thickens and china grass is fully dissolved.
  4. Now add the China grass mixture to the previously boiled milk and keep stirring on low flame till well mixed. Turn off the flame and set aside.

(Note: as we had kept the remaining mixture aside in step 5, it would have already formed into a pudding so we need to heat it before pouring in our container)
  9. Plain pudding layer: follow the same process of step 2, 3 and 4. Pour the mixture onto the 3rd layer. Now before we refrigerate it we have to garnish it with a mango flower. Let it set for 20mins. Your mango pudding is ready to serve.
